Spiced Rum Recipe
Ingredients 
2 litres white spirit 40%
25ml Runaway Rum Essence
100g Hi-Van Oak Chips
2 vanilla Beans (scored and slit lengthways)
1 stick of Cinnamon
10 Cloves (loosely crushed)
5 seeds Pepper (crushed)
1 piece Star Anise
1 tbsp Honey dissolved in 1/2 cup boiling water
Method (Makes 2 Litres)
Combine ingredients in a demijohn and leave for 1 week. Strain into bottles through a funnel stuffed with filter wool.
For a tangy twist - enjoy with orange juice and a piece of lime
