Limoncello
To make 5 litres you will need:
Zest of 16 - 30 lemons/limes
1½ - 2 cups sugar (to taste)
Glycerine or Vodka essence (optional)
Alcohol to make up to 5 litres
How to make it:
Put zest of lemons in demijohn and top up with alcohol (50%) remember to leave room for the sugar, place in cool dark place 40 days
Remove zest and filter thru tissues, add sugar and place back in your cool dark place further 40 days.
Adjust for sweetness (you may also wish to add some glycerine or Vodka Essence)
Remember your serving bottle is to be kept in the freezer and served very cold.
