You will need

5ltr Demijon
Funnel
Tissues/Filterwool
Citrus Zester


Ingredients

24 Limes/Lemons
4.5 ltrs Spirit (if you can, use 50% strength)
Vodka Essence
1.5 - 2 cups Sugar
4 tblsp Glucose


How to

Remove zest from fruit (take only the zest not pith) place this in demijohn top up with spirit and essence. Leave in a cool dark position for 40 days
agitate the bottle every few days
After 40 days, strain off the liquid removing all zest, this can be done in two stages  1. Strain thru stocking or filter wool to remove zest  2. Stain thru Kleenex tissue using the funnel to remove any small particles/haze
Place back in cool dark position for further 40 days

After eighty days begin to adjust for taste and viscosity (a little sugar etc at a time as all tastes are different)
Add the Glucose first to adjust viscosity as this does add a little sweetness.
You can now add sugar directly to the liquor and dissolve by shaking the demijon or make a syrup with 4 parts sugar to 1 part water and heat to dissolve. Cool the syrup and add a little at a time to your taste.

Once you have the desired taste, leave in the cool dark position for a further
10 days for all the flavours to combine

Limencello is best kept in the freezer section of the fridge (it will not freeze) Pour some into glasses share with friends and ENJOY
