You will need:
Morgans India Pale Ale
500g Dextrose
500g Corn Syrup
1 Cluster Hop bag
1 Saflager yeast
Procedure
1. In advance of brewing, chill 5-10 litres of water in a sanitised container*.
2. Steep Cluster Finishing Hops in 250 ml of boiling water for 10 minutes.
3. In your fermenter, add the Morgans India Pale Ale, Dextrose and Corn Syrup, along
with 2 litres of hot water and stir.
4. Tip in the Hops-flavoured water, putting the hop bag to one side.
5. Add your chilled water to fermenter and stir well. Top up to 22 lt with tap water, stir
well and sprinkle Saflager yeast onto the surface of the liquid.
6. Tip hop bag into fermenter, close fermenter and seal.
7. Ferment in cool conditions, ideally 12°C for best results**.
Notes:
* Use sterilized containers with lids. Do not freeze the water. Using ice can significantly increase the risk of
introducing bad bacteria into your brew, as can leaving your fermenter to cool before adding yeast. Use the chilled
water to reach a satisfactory temperature and add yeast immediately.
** Try to maintain a cool even temperature in the fermenter. Place the fermenter in a tray and wrap it in a blanket with
an end in a container of water. Placing the fermenter on a concrete slab can also help to keep the temperature constant.
