3 kg Aus Ale grain
1 kg Dark Munich grain
200g CaraRed grain
100g Crystal grain
100g Special B grain
150g Black grain
To Infuse grain use 11 litres of 70°C water (strike temp).
Mash Schedule: 60min @ 65° C, 20min @ 72°C. Then recirculate and
run-off.
FOR THE BOIL:
30g Cluster hop pellets (5.7%AA) – For Bittering
(Boil for 60min - 24 IBU)
1 tsp Irish moss or Whirl Floc – (boil for 15min)
20g Cascade hop pellets (5 % AA) – For Flavour/Aroma
(Boil for 10min - 3 IBU)
FERMENTATION:
Cool the wort and ferment as close as possible to 21°C
Preferably with White Labs WLP023 – Burton Ale Yeast
Dry Hop with 10g Cascade hop pellets
