BUNDY STYLE RUM
WITH MOLASSES
You will need:
• 3kg Molasses
• 3kg Sugar
• Distillery Rum Yeast
• Dry Enzyme
• Black Strap Rum Essence
• Burnt Sugar
How to:
1. Use 3kg Molasses and 3kg Sugar to make up a 25lt wash.
2. Add Distillery Rum yeast.
3. Add Dry Enzyme to assist fermentation of the Molasses.
4. After fermentation has completed, distill as normal with 5 capfuls
of Distilling Conditioner to prevent possible foaming.
5. Dilute to 40% and filter.
6. Flavour with equal amounts of Black Strap Rum Essence and
burnt sugar*.
*Making Burnt Sugar
1. In a pan, gently heat 1 cup of sugar.
2. Caramelise the sugar to the desired colour.
3. Very carefully and very slowly add ½ cup of hot tap water to make a sugar syrup and
remove from heat. (Note: Take care when adding water so it does not spit hot sugar)
